Each day, I would pour through loads of, sometimes, uber complicated recipes until I found just the right one. The one that would keep his interest and attention until we were done. Sometimes, the ingredients were inaccessible, and we had to improvise with other ingredients, but it would still turn out terrific. That said, here are some of the recipes we tried and loved.
Basic cookie dough
We're starting off with the easiest of all. The name of the game is easy and straightforward. So, we stuck to that from the jump. I was cooking with a kid, and I did not want to bore or burden him with a lengthy prep and cooking process. Although simple, this recipe delivers a beautiful and delicious product that fills your kitchen with the most delightful aroma. Needless to say, you can't mess this up.
Ingredients
250g butter, softened
1 egg yolk
Directions
Cream the butter and sugar with a wooden spoon in a large mixing basin, add the egg yolk and vanilla extract, and beat briefly to incorporate.
Sift in the flour and stir until everything is fully incorporated. Get your hands dirty, mix everything together, and push the dough together.
See? Simple and delicious.

Oatmeal raisin cookies
We will definitely be trying again. I know you might see oatmeal and raisin and immediately write off this as boring but trust me, you will be pleasantly surprised. They were so good; we could not keep our hands off them.

Combine the flour, baking soda, salt, and cinnamon in a large mixing bowl. Stir until thoroughly mixed and add creamed mixture, and stir. Add the oats and raisins to the mix.
Shape into 1-inch balls. Place 2 inches apart on ungreased baking sheets. Flatten with a greased glass bottom.

Coconut milk chocolate cookies
How could this not be a hit? We loved every bite. It was easy to make and came out just fine. Also, these are hard to mess up, as they are so easy and straightforward.
Ingredients
1 cup butter, softened
1 egg
1 cup sweetened shredded coconut
5 milk chocolate candy bars (1.55 ounces each)
Directions
Preheat the oven to 350 degrees Fahrenheit. Cream butter and sugars in a large mixing basin until light and fluffy, about 5-7 minutes. In a separate bowl, whisk together the egg and vanilla extract. Combine the flour, baking soda, and salt; gradually add to the creamed mixture, mixing thoroughly after each addition. Add oats and coconut into the mixing bowl.
Make 1-inch balls out of the dough. Place 2 inches apart on baking pans that haven't been oiled; flatten slightly. Bake for 10-12 minutes, or until lightly browned.
Each candy bar should be broken into 12 pieces, and a chocolate piece should be pressed into the center of each warm biscuit. Place on wire racks to cool.
The three-ingredient cookies
For this recipe, we went back to fast and easy. I was not expecting much from this overly simplified recipe, but boy, was I happy we tried it. It was so good; we made a second batch.
Ingredients
1 (15.25-oz.) box cake mix of your choice (such as chocolate or lemon)
2 large eggs
Directions
Preheat the oven to 350 degrees Fahrenheit (325 degrees Fahrenheit if using dark or covered pans). Add the cake mix, eggs, and oil to a medium mixing bowl. Scoop 1 1/2 scoops of dough onto 2 parchment-lined baking sheets, spacing them 2 inches apart.
10 to 12 minutes in a preheated oven until faintly brown around the bottom. Allow 3 minutes on baking sheets before removing to cool or serve warm.
These are a few of the numerous recipes we tried, loved, and thought to share. Give them a try and let us know what you think.
